To market, to market
Home again, home again, jiggety-jog.
Well, sort of. Ran out and got my errand done. I should have just dealt with it yesterday. Things were not better today.
Spending the rest of the day with my knitting. I finished up all my current sewing projects yesterday and need a day or so to work out what to start next. My list of projects is about 3 years worth of work long and it keeps growing!
Question of The Day:
February 8 - Have you ever made homemade soup? Care to share your favourite recipe?
All the time. Don’t use that many recipes though, mostly soup is a vehicle for leftovers/things that we need to use up, so it’s all improvisation. That said, the following is a good one and this weekend would be a perfect time to make some.
Cream of Carrot-Cheddar Soup
2 Tbsp. butter or margarine
1/2 cup finely chopped onion
1 lb. carrots, shredded (8-10)
1 lb. potatoes, shredded (3-5)
6 cups chicken or vegetable broth
1/2 tsp. dried thyme
1 bay leaf
1/8 tsp. Tabasco sauce (or to taste)
1/2 tsp. Worcestershire sauce
1/2 tsp. sugar
salt and pepper to taste
1 1/2 cups milk
1 to 2 cups cheddar cheese, shredded
1. In large pot saute onion in butter or margarine
2. Add broth, vegetables and seasonings
3. Simmer until vegetables are tender
4. Add milk and cheese, stirring until cheese is melted
5. Discard bay leaf
6. Serve hot, sprinkle with parsley if desired.
